The fruit grows on hills thriving along the subtropical latitude, Guangxi Mountains, Taiwan and Japan in an area as large as France. The fruit is carefully harvested by hand by small farmers and is therefore of the best natural quality. Once the fruit has been handpicked and carefully inspected, it is placed in large wooden barrels and tightly closed to avoid oxidation. Barrels are buried in the ground for 6-8 months. After the fermentation process is completed, the fruit is coated with herbs and sun-dried until a residual moisture of 30% is reached.
